Taco Stuffed Taters

So tonight I made some sweet potatoes stuffed with veggie ground meat (but you could easily use real beef) which was seasoned with some chili powder and cumin. I also scooped out some of the insides of the potatoes and added that to the meat filling. They were super good and quite healthy.
