I decided to go the same route as last week’s post and give you more plates of food.
Today we got 2 dinners and they were both delicious and healthy and super filling. They also both utilize leftovers which is something I love doing, because I hate wasting food

Chicken Stirfry w/ Quinoa:
This was a very easy meal that I made using leftover cooked chicken. I sauteed some carrots and corn kernels and added the chopped chicken. Then I just made a simple sauce with soy sauce, garlic, ginger, sesame oil, ketchup and honey. So it was sort of a combo between sweet and sour and honey garlic. It was delicious on its own but I just served it on top of some basic quinoa and it was a delicious meal.

Beef Turnover & Vegetable Quinoa:
So this meal uses some of the leftover quinoa from the first recipe. I just heated it up with more corn kernels, I love to have some on hand in the freezer, as well as some fresh spinach.
The turnover is made with puff pastry and has a curry ground beef filling. It’s almost like a beef patty.
