April 28: Chia Pudding

I had been looking for some easy or make-ahead snacks and that’s when I stumbled upon chia pudding. When I first made it, I only made a small amount because I wasn’t sure if I would like the texture. The little seeds are definitely not everyone’s cup of tea, but if you can get past that, you’ve got a delicious and filling snack! I’ve made this several times now and love it.

I originally found a recipe from the Feel Good Foodie website (link here) and it couldn’t be simpler to make. It is only 3 ingredients (chia seeds, milk of choice and sweetener of choice). You just combine those ingredients and let it chill in the fridge for a few hours or overnight. It gets nice and thick like pudding and you can eat it as is or topped with fruit.

I like to make a bigger batch and that will last me a few days. You can either make individual portions or make it in one larger container which is what I did.

The only change I made to the recipe was slightly increasing the amount of sweetener. So here are the amounts I used for my batch:

  • 1/4 cup chia seeds
  • 1 cup oat milk
  • 1 tbsp maple syrup
