January 6: Banana Bread, Peanut Noodles & Meatless Tacos

Happy new year everyone! I hope 2023 has been off to a good start! I’ve gotten back in the kitchen and back on track with healthier eating – we all know how overindulgent we can be during the holidays…

This was a good cooking week for me and these were all such delicious recipes!

Banana Bread:

This was a really tasty banana bread that I made originally during my cookbook challenge for Yum & Yummer. You can see my post here. But I had some old bananas and remembered that this book had a really good recipe and it came out amazingly!

It has chocolate chips and walnuts which are the perfect additions to fluffy banana bread. I also like that this recipe uses half whole wheat flour, makes it a little healthier.

Peanut Noodles:

This was an easy dish. If I’m being honest, it was a very lazy dish. It has very minimal cooking and not a lot of prep work.

I just cooked up some noodles, and then tossed them with carrot, cucumber and bell pepper. I made a sauce with a peanut butter base and just flavored it with some soy, mirin, sriracha, garlic, ginger and honey.

If I was feeling less lazy, I would have made it like a stir fry with the vegetables and served it as a hot dish – well I would have omitted cucumber – but I really liked how the cold salad turned out. This would be good for meal preps and it’s just really good as leftovers too.

Beyond Meat Tacos:

This last dish was some really good meatless tacos. I usually buy Yves veggie ground round but I was at the store and I saw the beyond meat was on sale for the same price as Yves so I just went for that. I had only tried it once before so I wanted to try it again in this application.

I just sauteed it in a pan and then added homemade taco seasoning, a little ketchup and some water. It cooks down for a bit and then it’s ready to use as taco meat. I had these cute little tortillas, put some meat on top and then all my toppings. I had sour cream, bell pepper, tomato, avocado and cheese. These were so delicious, albeit a little messy but very tasty.
