Hanukkah started on Sunday and we had a party with some family so that’s where my first picture comes from. The rest of the food this week was pretty easy, mostly it was just using up leftovers and whatever was in the fridge. I mean some of the best meals are repurposed from leftovers so nothing wrong with that.

Hanukkah Treats:
Two of the classic Hanukkah foods are latkes and donuts. I’ve got latkes on my plate here with some sour cream and sriracha which was a delicious yet unconventional topping combination. And then instead of traditional donuts, we made little funnel cakes which were so light and fluffy and just put a little icing sugar on top.

Spinach Dip Grilled Cheese:
For Hanukkah, we made cheesy spinach dip and there was leftovers so I used some to make such a gooey sandwich. I just spread it on some bread, sprinkled a little extra cheese and put a few pickled peppers to cut the richness then grilled it in my sandwich press. It was so simple to make and was so tasty.

Chicken & Veggie Ramen:
I had made some roasted chicken legs and thighs for dinner during the week and I took all the leftover meat off the bones before putting it in the fridge. This is a great timesaver because then the chicken is ready to use in any other dish!
I just cut some carrot, onion and zucchini, sauteed them then added the chicken, some broth and cooked the noodles right with everything. I only added enough water to cook the noodles, I didn’t want soup. Then I just seasoned it with some soy sauce, sriracha and sesame oil. This was such an easy and hearty meal.
