Wow I can’t believe it’s already the second week of December!! I’ve been working so hard on my cookie business (Lindsay Bakes) that I haven’t been cooking too much recently. The meals I’m sharing today were simple but still very delicious! They are also quite straightforward so I didn’t have too much to say about each one.

Avocado Toast:
This is the first of two toasts that I had this week. We got some mashed avocado, tomato, alfalfa sprouts and green goddess seasoning from Trader Joe’s. This was a super fresh combination of ingredients and I really enjoyed the flavour of the sprouts with everything.

Banana Pancakes:
I love pancakes. These pancakes were actually served for dinner one day, there’s just something so fun about breakfast food at dinner time. They were packed with banana which ensured they were very moist and fluffy. I ate them with some cottage cheese for a nice protein boost.

Egg Toast:
And now, here we are at toast #2. This one had a double dose of protein because there was hummus on the bottom plus a hard boiled egg. Then I also put some tomato, and seasoned it with salt and pepper.
