Hihi, I’m starting to feel like a broken record here but I feel really bad that I don’t have more recipe content to share with you all.
I have fully recovered from whatever throat infection I had and I’m back to eating regular foods. This week has just been all over the place which means my meal schedule was off.
The only recipe I have to share with you for this week is my meal prep. This was super simple because it was just a bunch of leftovers from the weekend that I put together to make my meals.
There is:
- Pesto pasta salad: fun twisty pasta with basil pesto, cucumber, tomato and olives
- Breaded chicken cutlet, cut into bite sized pieces
- Cooked beets
This was such a tasty lunch. The pesto went well with the beets and everything was so balanced.
