November 11: Quinoa Salad

Hi everyone! You know when you just have a bad week, that is me this week. I’m currently suffering from a throat infection so it’s hard to eat most foods. I’ve been essentially living off oatmeal, rice, scrambled egg and freezies. It hasn’t been very fun but I am on the road to recovery!

Anyways before I got sick, I had done my weekly meal prep for lunches so that’s what I’m sharing with you today.

Veggie Quinoa Salad:

I hadn’t made quinoa in a little while so I thought it was time I got back to it. I added some edamame for protein, as well as bell pepper, corn and feta cheese for extra goodness.

The dressing was red wine vinegar, dijon mustard, honey, salt, pepper, garlic powder, chili flakes and oregano. This was super tasty and I’m so sad I can’t eat it now because of my sore throat.

I hope to get back to eating more solid foods in a few days, and I’ll be back to cooking too!
