Weekly Roundup: Kugel & Burrito Bowl

Wow I can’t believe October is pretty much finished, it really feels like it just started. Before we know it, it’s going to be new years, it’s crazy how fast time is flying.

Anyways, I got two savoury dishes today – one is a side and one is a main.

Zucchini Kugel:

I love making kugels, There have been several posts on my blog from over the years, using a variety of different vegetables. This one is made of zucchini and it was different from the others I’ve made before in that this one was so fluffy and creamy.

Usually in kugels, you want to squeeze out all the moisture from the vegetables but this one you don’t do that. I think that’s what gives the great consistency. So it’s made of grated zucchini, onion, eggs, oil, flour and then some spices. One of the spices is turmeric which gives the great yellow colour.

This is such a great side dish for any roasted chicken or beef dinner. Recipe is from Vered Guttman.

Vegetarian Burrito Bowl:

I feel like I haven’t made Mexican food in such a long time. This was a pretty basic burrito bowl and it was a great meal.

There’s brown rice at the bottom then a variety of toppings loaded on. First thing is the refried beans which are the main protein for my bowl – you can use any protein you like though. These beans are pretty simple, the recipe is from Cookie & Kate.

Now for the rest of the delicious toppings. There’s sauteed peppers and onions, shredded cheese, avocado, salsa and sour cream. I love all the colours and flavours that everything contributes to this meal. It’s such a perfect vegetarian option and it only takes about 30 minutes to prepare.
