Happy Friday, hope your week was a good one! My week was busy again but I did manage to get a couple dishes to post about!

White Chocolate & Walnut Pancakes:
I love pancakes. My family always makes the recipe from the Good Housekeeping cookbook, it is a straightforward recipe and always comes out amazing. Once in a while though, I like to add some mixins just to make it more exciting. Here, I added some white chocolate chips and chopped walnuts. These were delicious additions, and gave a nice crunch and hit of sweetness.
My toppings were plain greek yogurt and some fresh strawberries. This was the perfect breakfast. And of course, I love pancakes because of how versatile they are – inside and out.

Greek Chickpea Salad:
This was my meal prep for lunches this week. I had a base of chickpeas, then added cucumber, tomato, green olives and feta cheese. The dressing was red wine vinegar, maple syrup, dijon mustard, oregano, chili flakes and black pepper. This was a very light but satisfying lunch. I love greek salad so this is everything I like but with the protein-rich chickpeas too. To take this salad a step higher, you could mix in cooked quinoa or couscous.
