Burger with Roasted Sides

This week was not very a good cooking week. The only post I have of food is my meal from Monday which You can see and I will talk about shortly. The rest of the week was sort of a blur, I was very busy and also the fast of Yom Kippur happened so obviously I was not eating for that. I hope to just get on a good schedule for you (and for me) next week and then I will have a lot of content to post!

Anyways, this was a delicious meal. It was a simple beef burger on a potato bun with mayo, dijon mustard and some tomato. And then on the side there is roasted broccoli and acorn squash. I actually picked the squash myself from a farm. I’m so happy it’s fall because I love squash season. This squash was tasty but I think my favorite is the delicata variety, and they’re a lot easier to cut.

If you are looking for an easy preparation for squash though, just cut it up (and peel if necessary) and toss with oil, salt, pepper and a little bit of cinnamon. Roast it for about 30 to 40 minutes depending on how large you cut it, until it is fork tender and starting to caramelize. It is so delicious and sweet and the perfect healthy side dish.
