Colourful Stirfry (using LEFTOVERS)

This week started with Rosh Hashanah and since we cooked a whole bunch of food for that, we’ve just been eating the leftovers the past few days. For the most part, we’ve just been eating the dishes as they are. But for today’s post, we got a little creative.

This was a delicious stirfry with leftover duck sauce chicken*. I cut up the chicken into little bite-sized pieces and then added it to a simple mix of sauteed onion, bell pepper, zucchini, snap peas and cauliflower. I didn’t have to add any seasoning because there was plenty of duck sauce from the chicken.

*Side note: if you’ve never had duck sauce before, it is similar to sweet and sour sauce. It’s made with apricot preserves, soy sauce, vinegar, sugar and some seasonings.

I served the stifry on some whole wheat spaghettini and this was a delicious meal. It was really nice to switch up the regular leftovers.
