Hello everyone, hope your Fall is off to a great start. The weather where I live has dropped significantly in the past couple of days so all I want to do is curl up on the couch in comfy clothes.
It’s also just been a busy week for me between work and life, so my cooking schedule has had to adapt. It was a mix of random leftovers or easy frozen food but I did make a couple “photo worthy” recipes this week despite everything else.

Blueberry Muffins:
These were a relatively easy recipe and they turned out very nicely. I like that they have some pumpkin puree in them, it’s perfect for this time of year. They were super moist and the blueberries in them are a nice touch. I had one of these everyday this week with my lunches and it’s the perfect snack. You could also pop these in the freezer and then just grab one in the morning before you leave the house. Here is the link for the muffins if you wanted to make them (recipe here).

Beef & Barley Soup:
I know I made a soup sort of similar to this one a couple weeks ago, in my first weekly roundup post but I just love soup especially not the weather is getting colder.
So this one had barley, a variety of vegetables and ground beef so it really was a meal in a bowl. And as it was cooking, all the barley was really soaking up all the broth so it almost turned into a stew. But with the leftovers, I added more water to thin it out and get it back to soup consistency. But this was really tasty and I like the little heat from the chili flakes but you could always adjust that to your taste. Here is the soup recipe.

Before I sign off for the weekend, I just wanted to say happy new year to everyone celebrating Rosh Hashanah. I have been cooking away today and more cooking will happen Sunday. I’m excited to spend time with my family and stuff my face with delicious food.
