Ginger Turmeric Tofu

Today’s post, I am back on track with Brave New Meal cookbook recipes. This is a tofu recipe that follows the same cooking technique as the Lemongrass Baked Tofu so check that out for the full explanation.

The marinade for this tofu has soy sauce, rice vinegar, lime juice, brown sugar, ginger, sesame oil, sriracha and turmeric. It is a nice mix of sweet, spicy, sour and salty.

Because of the marinating time and basting while cooking, the flavours really soak into the tofu, and so does the colour! Turmeric gives such a pretty yellow colour to anything you put it on so this tofu was dyed.

This came out of the oven really nicely. Because there were no chunks of ingredients like in the lemongrass tofu recipe, the basting was a lot easier. I cut it up into small cubes and used it in my meal prep for the week. I made a quinoa and vegetable salad and this was such a nice addition of protein on top. It was very delicious together.

The only notice I will give if you want to make this recipe is that the turmeric will stain. So just be careful when making the marinade and doing the basting because the yellow colour may stain your counters or clothes. I would definitely make this again but probably omit the turmeric because it doesn’t add any flavour to the tofu. Very good recipe though!
