Broccoli Rabe Pasta

I don’t think I could ever get sick of pasta dishes. There are so many posts about pasta on my blog, the variety is almost endless. You can check them out here (pasta recipes).

Today’s pasta is definitely one of the easier ones you could make. It is just broccoli rabe (but I used broccoli), pasta and a very simple sauce. I’m not even sure you can call it a sauce because of how few ingredients/amounts are used. It is just olive oil, garlic, chili flakes, lemon juice and pasta water.

It sounds very basic but sometimes that’s all you want or need in a comforting dinner. There are no frills, just a delicious bowl of pasta. There is a good ratio of broccoli to pasta so it is pretty healthy I guess. You could add more vegetables too if you wanted to make it even healthier but I really enjoyed it as is.

The final touch on this pasta is the crispy panko which is a little recipe at the back of the cookbook. It’s just toasted panko bread crumbs, seasoned with paprika, garlic powder, salt and lemon. I’ve made it a few times for other recipes (Braised Artichokes & Brussel Sprouts Hash). It is always delicious and adds the perfect amount of crunch.

The only thing I would add to make it even better (but also not vegan) is some parmesan or any shredded cheese. But this recipe was so good though, I just love the flavours of garlic and chili flakes.
