Pineapple Fried Rice

It is Monday and I can’t believe it’s already the second week of June! 2022 has just been flying by and it’s been a pretty great year so far but I still can’t believe how fast it’s going.

Something else that is flying by, is the recipes in this Brave New Meal cookbook. I believe this is the 43rd recipe that I’m cooking which is crazy because it feels like I just started. Anyways let’s get to today’s recipe – pineapple fried rice.

Fried rice is a great side dish, made using leftover cold rice. It typically has scrambled egg but this is a vegan version so there is none in this recipe. This has a lot of vegetables – carrot, peas, spinach (or another green) – which makes it actually kind of healthy. It is very colourful because of those additions too.

There is also obviously the pineapple in here too which adds a nice fruity aspect. I’m not usually a fan of cooked/hot pineapple because it tends to get mushy but I liked it here! Since it only cooks for a short amount of time, it retains its structure and is a nice sweet nugget to bite into.

The seasoning is very basic but perfect. It is just garlic, soy sauce, rice vinegar and sriracha. All the flavours were balanced and it all worked together really nicely. This was a really tasty dish that I served with some baked tofu.
