We’ve made it to Friday and today’s recipe was a super tasty and simple side dish! This is called Tomato Rice and it’s a side that can be paired with pretty much anything, though its flavours are somewhat Mexican inspired.
Rice is one of those ingredients that is so versatile and works in a variety of dishes or just on its own. There is nothing wrong with plain rice but adding delicious spices, onion, garlic, tomato and herbs makes it so much better. More specifically, this rice has chili powder, cumin, jalapeno and cilantro which pack a ton of flavour!
I love rice dishes like this because you start by sauteing everything and then you add the rice and broth. It simmers away to cook like normal and it gives you the perfect amount of time to make everything else for the meal. I paired this with simple crispy tofu and salad. It was perfect.
This rice turned out so fluffy and nicely seasoned. Nothing was overpowering and it was so fresh with the cilantro and lime at the end. I really liked this dish and I think it would be great for some meal prep during the week.
