Roasted Corn Salsa

Happy Monday! I hope you all had a nice weekend and good mother’s day! I had brunch with all my family to celebrate and it was such a fun time. I’m also very happy that the weather here is getting warmer and super sunny, which makes me excited for the next few months!

Today’s recipe, Roasted Corn Salsa, is so fresh and summery, just like the Carrot Salad from last week!

I love salsas because they can be made with such a variety of ingredients (fruits or vegetables). They can also be eaten on their own or with chips, which is what I prefer.

This salsa has corn, tomato, cucumber, red onion, jalapeno, cilantro, lime and salt. Lots of colours and a whole lot of crunch here.

The one thing I had to adjust was trying to “grill” the corn cobs in a frying pan because I don’t have an indoor grill. I put a touch of oil on them and started cooking them over medium heat. They were cooking but they didn’t get any char marks like you’d get from a grill. So maybe it was a waste of time to try this but I didn’t want to just put raw corn in here.

This still tasted amazing though. I lost out on some flavour from not grilling, but the corn was so perfect with all the other veggies. The only seasoning is the lime and salt which is all you need because you want the fresh ingredients to shine through. Very good balance of sweet and slightly spicy.

I find that salads with cucumber in them don’t seem to keep as well after the first day so definitely eat the majority of this salad fresh, if possible. It was very good and I would probably make this again!
