Glazed Bok Choy with Garlic

I feel like one reason people feel that they can’t eat healthily is that it takes so long to prepare the food. All you need to find is recipes that are quick – like this one – and then you have no excuse!

This is the Glazed Bok Choy from the Brave New Meal cookbook. I really like bok choy and I usually put it in stirfries with other vegetables. I have never cooked it in halves like this before but I loved it. This was such a nice preparation and it was flavoured really nicely with the sauce.

The bok choy starts off being browned in the pan with a little oil, then it’s removed to a plate so that the sauce can be made. It has lots of garlic and ginger, as well as broth, soy sauce, rice vinegar and sesame oil. These are very simple flavours but that’s all you need so that the bok choy can still shine through. There is also a little bit of cornstarch added to the sauce but it didn’t really thicken up too much.

Once the sauce is done, the bok choy is added back so that it can soak up all the flavours. The final touch is a sprinkle of sesame seeds.

This was a delicious little side dish. The bok choy is perfectly cooked and so tasty. Serving this on some rice, with a little chicken or tofu is the perfect meal.
