Carrot and Rice Soup

It may officially be spring, but the weather is still a little chilly where I live, so I’m glad today’s recipe is a nice hot soup!

This carrot and rice soup is such a nice home-style recipe. It’s very classic and simple with the ingredients and flavourings but I loved it! It’s recipes like this that are perfect when you’re a little under the weather or just want something very warm and comforting.

So it starts off very basic with onion, garlic, celery and carrot – these are the bases for any good soup. This recipe also has some brown rice and greens (calls for kale but I used spinach) which makes it more filling and hearty. What kicks it up a notch is the additions at the end too – parsley, dill and lemon juice. Those make it so bright and fresh!

This was a nice lunch, complete with a little bread on the side. The flavours were so fresh and because this is just a brothy soup, you don’t feel weighed down when you eat it.
