Shredded Daikon Salad

Happy Monday everyone! Just starting the week similar to how I ended last week – with a nice simple salad. Check out my last post if you haven’t seen it already – Smashed Cucumber Salad.

Just like the cucumber salad of my last post, this is a very simple, quick pickled vegetable salad, but this one has daikon radish and carrot. I love the crunch and peppery flavour of radishes, daikon is actually on the milder side of the scale though.

It starts off in a similar fashion by letting the daikon and carrot sit with the salt for a few minutes to drain out excess moisture. And then the other ingredients are added – green onion, garlic, ginger, rice vinegar, soy sauce, sesame oil and sugar. So again, you can see the Asian influence in the ingredients but everything is very fresh.

This was pretty tasty but I found that it needed a little extra salt to get it just right. Good flavours though and nice crunch.
