Southwestern Slaw

The next recipe in this cookbook is this delicious and colourful coleslaw. It is southwestern themed and it is very bright and fresh! This reminds me of a recipe from Thug Kitchen 101 called Southwestern Pasta Salad – the dressing and some of the salad ingredients were similar. Also a very good recipe!

There are so many ingredients in here – red and green cabbage, carrot, bell pepper, corn, jalapeno, cilantro and chives. It has almost all the colours of the rainbow. All those different vegetables obviously give a lot of colour to this salad but they also provide a lot of texture and sweetness. There are also some pumpkin seeds which give something special here.

Everything comes together with this really delicious dressing. There are quite a few ingredients in the dressing and you wouldn’t think they belong in a dressing but it all gets blended until super creamy. It has: avocado, corn, green onion, spices, lime juice, rice vinegar, olive oil and a little water to help with blending. It is very bright and well balanced.

I served this as a side with dinner and the whole thing was gobbled up, everyone loved it. The flavours went well together and the heat of the raw jalapeno was very nice. Delicious slaw!
