Happy March 14 (aka Pi day). Normally, this day is meant to be celebrated with a slice of something like pizza or pie. But this year, even though it is not following the trend at all, I’m celebrating with some hot soup!
This was a very chunky and hearty cabbage, tomato, and other vegetable soup with tortellini in it. It would be great without the tortellini too but the pasta really turned it into a full meal. There are also some lentils in here – it calls for black but I couldn’t find those so I used green instead which have a similar cook time. There were a lot of nice textures.
This was just such a nice warm stew that would be perfect for a cold winter day. I love the tomato base and all the flavour from the herbs and spices – garlic, smoked paprika, thyme, rosemary and parsley. It’s just so comforting.
One note of something that I did differently is that I had frozen tortellini so I decided to boil them on their own and then stir them into the soup afterwards. The recipe calls for just fresh tortellini and you cook that in the soup but I wasn’t sure it would work the same with my frozen ones. But it worked out very well this way.
I really enjoyed this though and the recipe makes a huge amount of soup so you can feed some very hungry people with this.
