Crispy Spaghetti Pie

We all know that one of my favourite things is a big bowl of pasta, but this was something new. This is the Crispy Spaghetti Pie from Thug Kitchen 101 cookbook. This was a wedge of pasta. This was baked in a springform pan and gets served in slices. I bet you’ve probably never tried this before. I like baked pasta but I’ve never made one with spaghetti, it’s a whole different experience to serve pasta this way.

This recipe starts with the sauce. It’s made with tomato sauce, artichoke hearts, onion, garlic, nutritional yeast, balsamic vinegar, thyme and salt. This was a really nice mix of ingredients and it couldn’t be easier to prepare because it all gets put in a blender and pureed until smooth. The nutritional yeast and artichokes give the sauce a little creaminess.

Then in a large bowl or pot, you first combine the cooked pasta, shredded zucchini, basil and olive oil and then toss in the sauce until everything is fully coated. That mixture gets pressed into a springform pan, sprinkled with some panko breadcrumbs and then baked until golden brown and a little crispy on top.

This was a huge pan of pasta. The recipe says it feeds 4 people but honestly this was enough for 6. Serve this with a nice salad and dinner is done. It was delicious and I really liked the crispy panko on top.

The key with baked pasta though, make sure you undercook the pasta when boiling it. If you fully cook it in the pot, after it comes out of the oven, you’ll be left with a mushy mess. So definitely underboil the noodles by like 2 minutes and then they will be perfect!
