Jicama-Corn Salsa

I know it’s December but there’s nothing wrong with having a little taste of summer! Fresh salsas are such a great way to pack a lot of bright ingredients!

This was the jicama corn salsa from Thug Kitchen 101 cookbook. It was such a simple recipe with only a few items. The main ingredient – jicama – was a little hard for me to find in a grocery store. But I went to Whole Foods and found it there!

If you’ve never had it, jicama is a root vegetable that tastes like a cross between a potato and an apple. It’s crunchy and a little sweet so it’s perfect in a fresh salsa like this. It was mixed with corn, tomato and red onion so it was quite colourful. And it was simply seasoned with lime juice and a little salt.

This was a nice little appetizer with some pita chips, super crunchy and fresh! This salsa would also be great on a taco bowl or taco salad. It is such a nice change from regular tomato salsa.
