Snickerdoodles

Starting the week with cookies!!

If you know me, you know I have been baking and selling cookies – Lindsay Bakes – I started at the beginning of this year. One of the cookie flavours I offer is snickerdoodle. It is a cinnamon dough rolled in cinnamon sugar. It was one of the first flavours available on the menu and now I have seven to choose from! Check me out on Instagram!

Anyways, so this week’s Thug Kitchen 101 recipe is Snickerdoodles. This is a fully vegan recipe so it uses coconut oil and olive oil. It was quite an easy dough to make, although I found it to be a little wet after mixing in the dry ingredients. I simply added a couple more tablespoons of flour and that helped it hold together better.

I think my dough was still a little on the softer side, but I was able to roll them in the cinnamon sugar then put on the baking sheet and flatten with a fork. They baked up nicely but I think they spread a little more than they should have – they just looked bigger than the picture in the cookbook.

These were good cookies. They were soft inside – I guess this is due to the cream of tartar – and had a little crunch from the sugar on the outside. They were very light and I could have easily eaten 3 of them in one sitting.
