Mediterranean Cauliflower Rice

Happy Friday! I’m back with my second cauliflower rice recipe. If you missed my first one, earlier this week, I made Mexican cauliflower rice – definitely check it out!

Today’s cauliflower rice recipe is more of a side dish, rather than a main course. However, you can easily serve it with your protein of choice to make it a meal.

So what I’ve made today is a simple “rice” dish. You could make this with real rice, but the cauliflower makes it so light. I’ve flavoured it with garlic, parsley and lemon, as well as some almonds for a little crunch. This dish was quick to prepare but it packs so much flavour.

When I was eating this, it really reminded me of hot couscous – with the similar texture – and it tasted so good with the Mediterranean flavours. It is just a great, easy side dish that can accompany so many different things. You can also make this ahead of time and serve at room temperature as a salad!

Ingredients:

  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 2 cups cauliflower rice
  • 1 tbsp lemon juice
  • 2 tbsp parsley, chopped
  • 2 tsp garlic, minced
  • 2 tbsp sliced almonds
  • 1/4 tsp salt
  • 1/8 tsp pepper

Directions:

  1. Heat oil in skillet. Saute onion 3-4 minutes until softened. Add cauliflower rice and cook 3-4 minutes, until tender.
  2. Add remainder of ingredients and cook another 1 minute. Adjust seasoning if necessary with additional salt and pepper. Serve.
