Looking for a very easy treat to make? I’ve found it. This is my next recipe from Thug Kitchen 101 cookbook and they are no-bake cookies. They’re made with only 3 ingredients – chocolate, peanut butter and saltine crackers. Yes, you read that correctly, saltine crackers. I was a little skeptical of it at first too, but it works.
It starts by melting down some semi-sweet chocolate chips and combining that with peanut butter until you get this beautiful smooth mixture. Then, you mix that with crushed up saltine crackers, ensuring everything is fully coated. After that is just scooping mounds of the mixture onto parchment paper and letting it firm up in the fridge. This took about 5 minutes to make, and maybe 20 minutes to cool, so very fast.
I’m not sure of the science but the crackers soften up ever so slightly but still retained most of their crispness. They combine with the chocolate and peanut butter and it actually tasted like a chocolate cookie. It was very rich though so I could only eat one of these in a sitting.
This recipe reminded me of Puppy Chow that I made (also from this cookbook), which also had the chocolate and peanut butter combination. It’s just such a good flavour match up.
This definitely wasn’t the most attractive snack but they are tasty so give them a try if you have some saltines lying around.
