Are you ready for another fall pumpkin post?? So last week I made that delicious Pumpkin Marinara Pasta (link here) but I still had lots of pumpkin puree leftover. I decided to make something sweet.
I found this recipe for these cookies from the Momables website (link here).
This was a very easy recipe to make and didn’t have too many ingredients. It was also a one bowl dough so what more could you ask for. They were just a mix of pumpkin puree, peanut butter, honey, vanilla, oats (I used rolled instead of quick oats), pumpkin pie spice and baking powder.
The one thing about the recipe is that it doesn’t say how large to make the mounds of dough. I used a tablespoon scoop which ended up being smaller than intended because I got about 25 cookies from this batch – recipe says yield is 15. I simply just baked them less time and they turned out fantastic.
I really liked the combination of pumpkin pie flavours with the peanut butter. And along with the oats, it was almost like a peanutty, pumpkin oatmeal cookie. It just all worked. The cool thing about this dough is that since there is no egg or flour, you can just eat the mixture as is!
These were so tasty and I like how soft they are. I have them stored in the freezer for whenever I want a little snack.
