Ginger Curry Noodle Soup

Now that the weather is starting to get colder, that means I can get back into soups! I love soups so much and you will find many different posts on my blog!

Today’s recipe is the Ginger Curry Noodle Soup from Thug Kitchen 101. This bowl is packed with lots of good stuff.

This was a very fragrant soup to make, similar to last week’s recipe (Chickpea Biryani). There are so many spices in the curry powder, and there is also garlic and ginger. My house smelled amazing the whole time! It was those ingredients, as well as broth and coconut milk that formed the actual soup portion. So it was very flavourful and a little creamy which I loved.

The broth on its own was delicious, but there were lots of other ingredients in here that turned this into a meal: udon noodles, sweet potato, spinach and tempeh. The noodles and potato helped to bulk up this soup and make it really filling. Then the crumbled tempeh, added good texture and lots of protein! It is a really good source of protein if you are looking for more plant-based options.

I love the all the green from the spinach, cilantro and green onion. It was just so colourful and pretty, especially with the orange sweet potato too.

I have nothing bad to say about this soup. It was fast and easy and delicious. What more could you ask for? I hope you have an amazing week ahead!
