Baked Peaches

Peaches might be my ultimate summer fruit. When they are in season, my family always buys a whole bunch of them… weekly. And they do not go to waste! Mostly, we just eat them fresh but sometimes, it’s nice to bake with them.

I love making crisps/crumbles but sometimes you want a dessert that’s easy and takes less prep time. That’s where these Baked Peaches come into play. By just cutting the peaches in half and removing the pit, half the prep is already done. Then you just have to make the crumble topping, pile it on, and bake!

This crumble recipe is so simple too, it only has 5 ingredients. The base is oats but there is also some brown sugar, butter/margarine (I used DF which makes it vegan), cinnamon and salt. It’s not overly sweet but the salt adds a nice contrast. The butter is what keeps everything together but it also gives some richness to the dessert.

These peaches were incredible. The peach is soft but still firm and the crumble gets a little crispy so the textures work well together. Also, the ratio of the fruit to crumble is perfect, so you get lots of oat goodness with every bite.

You could definitely use this method and make baked apples instead, but they would take about twice as long to bake. Actually, if you were so use apples, I would suggest baking in two parts. First bake the apple halves on their own for maybe 10-15 minutes, then put the crumble and bake another 15 minutes. That way, the apple will be softened and the crumble won’t burn.

This is such a great dessert for entertaining because it is perfectly portioned and everyone just gets their own peach half. It is also very easy to double or triple the recipe and make a whole bunch of baked peaches. You could also go the extra step and top the peaches with some ice cream. The warm peach with the cold ice cream would be such a nice combination.

Ingredients:

  • 2 peaches
  • 1/2 cup oats
  • 2 tbsp brown sugar
  • 2 tbsp margarine/butter (I used DF)
  • 1/2 tsp cinnamon
  • 1/8 tsp salt

Directions:

  1. Preheat oven to 375°.
  2. Cut peaches in half, remove pit and place on parchment/silicone mat covered baking sheet.
  3. In medium bowl, combine all remaining ingredients until well mixed.
  4. Spoon oat mixture on top of peaches, and gently press down.
  5. Bake 15 minutes until peaches are soft and crumble is lightly golden. Let cool 5 minutes before serving.
