PB & Fruit Smoothie

I’ve been eating quite a lot of berries recently, specifically blueberries. They’re just so good – taste-wise and nutritionally – and they’ve been on sale recently so I like to always have them on hand.

A few weeks ago, I posted the incredible Blueberry Cheesecake French Toast and today I’m back with another blueberry recipe! This recipe is super simple and you probably have all the ingredients already.

This is a delicious smoothie with only 5 ingredients – banana, blueberries, peanut butter, flax seed and milk. The blueberries are packed with antioxidants, the flax has lots of fibre, and there is no added sugar. The only sweetness comes from the fruit!

Since peanut butter and banana have such strong flavours in a smoothie, you can’t even taste the other ingredients. This makes it the perfect treat for children if you want them to get more nutrition. They will also love the purple colour, it is very inviting. You could even switch out or use a combination of strawberries and blueberries, that would be delicious too. I normally love to add spinach to my smoothies as well, but the colour would turn a little brown and unappealing.

Whatever ingredients you choose, this is going to be a delicious smoothie. It’s a great breakfast or snack that is sure to fuel your day!

Ingredients:

  • 1 banana, frozen in chunks
  • 1 cup blueberries, frozen
  • 1 tbsp peanut butter
  • 1 tbsp ground flax
  • 1 cup milk (DF/vegan: use DF milk) (*plus more if desired)

Directions:

  1. Add all ingredients to blender and blend until smooth. *Depending on strength of blender and desired consistency of smoothie, you can add up to 1/2 cup more milk
  2. Pour into glasses and serve.
