Last week I made that delicious peanut butter dip (click here to see that) and here I am again with another nutty recipe. I love peanut butter so much, I could eat it every day without getting sick of it.
Today I have made these adorable jam cookies! I saw this recipe on instagram (link here) and I knew right away that I was going to make them. There are only 6 ingredients and I almost always have all of them on hand. You can check out the recipe for all the measurements but here is the list of items: banana, oats, peanut butter, cinnamon, baking powder and jam.
This was such an easy recipe and makes an awesome afternoon snack or dessert. I LOVE the classic combination of peanut butter and banana, which also goes great with the jam (I used strawberry).
The original recipe has quite a small yield so I decided to make a double batch because I had a feeling I would like them – I got 8 cookies, using ~2 tbsp of mixture for each one. They baked up nicely and almost turned into a nice soft baked oatmeal. I also really liked that it wasn’t a sweetness overload, it was well-balanced.
If you mixed all the same ingredients (minus baking powder), that would be a delicious no bake treat. Another alternative would be to bake them up without adding the jam on top. Those are two great options, but I loved these cookies exactly how they are.
I ate a few cookies right away and I stored the rest in the freezer. I like to eat them while they are still a little frozen, it’s a little refreshing that way. I am so happy with how these turned out and I will definitely make them again.
