Happy Monday! It’s going to be a good week. I say this because I’m starting it with some freshly baked cookies and that’s pretty awesome. It’s nice to start the week on a sweet note. These are the Banana Chocolate Chip Cookies from Thug Kitchen 101 cookbook.

I know they may look like regular chocolate chip cookies, but these ones have yummy banana in them too. It’s almost like eating banana bread but in cookie form. Yum!

These cookies were simple to make and turned out really well. They’re soft and fluffy inside with a nice banana flavour and lots of chocolatey goodness.

If you’re looking for a good cookie recipe (whether you’re vegan or not), give these ones a try! If you wanted to take them up a notch, I think subbing half of the chocolate for some chopped walnuts would be incredible here.

But as is, these are a very tasty, no frilled treat. They freeze well too, so you can make a batch to keep in the freezer and just take one (or two) out when you want a snack! They also essentially thaw immediately so no need to wait after taking them out of the freezer. Happy baking and I hope you have a good week!
