I’ve made a lot of soups in my life. And I feel like every time I post about soup, I tell you how much I love soup. Well I’m here today to keep that streak alive! Since it’s Monday, this soup is another recipe from the Thug Kitchen 101 cookbook.
The name of it only mentions turmeric and sweet potato but there is so much more going on than just those things. This was a super chunky soup with pasta, vegetables and beans. It’s very hearty and satisfying, really reminded me of a minestrone. It’s almost a meal with a little bread on the side.
There was a little bit of chopping for all the veggies but it was pretty easy to make otherwise. The broth itself was super flavourful from the seasonings and it had a nice yellow colour from the turmeric. I loved all the different textures in this soup too. Every bite had so much going on – piece of potato, chickpea, tomato, kale, pasta and the broth. It all worked so well together.
This is the perfect thing to eat on a cold night, it will warm you up so nicely. You could probably even make a double batch and freeze it, that way you just have to thaw it and reheat.
Another thing you could definitely do with this soup is switch out some of the veggies if there’s something you don’t like. Not a fan of sweet potato? Use carrots or squash instead! No kale? Use spinach instead. You could also just add in any veggies like zucchini or bell peppers. This soup is so customizable, anything will work well with this broth!
