Homemade Tortillas + Fish Tacos

If you haven’t seen my last post, the Lemon Butter Tilapia (link here), I highly suggest you do. It was such a good fish preparation. I had a couple pieces leftover the next day so instead of just eating it as is, I made some tacos!

You can use any proteins in tacos, it’s a fun but easy way to transform your leftovers too. I kept mine super simple with just the tilapia, some iceberg lettuce and a little sriracha. I didn’t want to overpower the delicate flavours of the fish. This was a delicious meal and didn’t feel like I was just eating boring leftovers.

However, to make things more fun, I made my own tortillas. I’ve never tried making them before and I had heard they are so much better than store-bought. I used this recipe from Taste of Home (link here). I didn’t realize how easy it was to make tortillas too! The dough was made of flour, salt, oil and water. Just have to mix those together, knead it a bit then divide and roll into circles.

My tortillas came out a little wonky/oblong but that’s okay. I clearly do not have very good circle-making skills. They cooked up pretty well though and got a couple brown spots so I thought they looked good.

I just had to put my fish and toppings and then it was time to eat. I must say, homemade tortillas definitely beat store-bought. They had such a nice chew and just tasted way fresher. With how easy they are to make, you could be having fresh tortillas every day of the week. I will for sure make them again, maybe trying with whole wheat flour to make it a little healthier.
