Since my blackened tilapia from a couple weeks ago was such a success, and I had lots of fish leftover in my freezer, it was time to make another fish dish!
This time, I made lemon butter tilapia from Food.com (link here). This was such a simple recipe with so few ingredients. You just coat the fish with seasoned flour, sauté in some butter and olive oil, then add in some parsley, more butter and lemon juice. That’s it.
I love simple recipes like this. You have a delicious protein ready in about 15 minutes, and it becomes a nice meal with a side salad and bread. Or you can serve it with couscous, rice or pasta. Once you have the cooked fish, you can pretty much eat it however you want. You’ll even want to eat it plain because it is so tender and flavourful.
By dusting the fish with the flour, it helps give it a little crust and it gets browned in the pan. And cooking anything in butter and oil just gives so much flavour and makes the kitchen smell so good! The best part here was the lemon and parsley. Both of those ingredients are so fresh and they really brighten up the fish.
I think the parsley was supposed to be finely chopped but I kept my pieces on the larger side, to give extra bite. I also added more than the recipe called for because I just love its flavour, you can never have too much parsley in something.
