Banana Nice Cream Bars

I don’t know why, but I love eating frozen treats when the weather gets cold. I guess it is along the same lines as people drinking hot coffee in the summer? Either way, I made this delicious dessert and had to share!

I follow this account on instagram (@nataliesnaturalfood) and she made these banana nice cream bars a while back (link for the post here). I wanted to make them but kept forgetting about it.. until now! I finally made them but I put my own twist on her nice cream recipe. I will write down my exact recipe down below.

If you’ve never had/heard of nice cream, it is frozen bananas that are blended until creamy and resemble ice cream. I added 1/2 cup almond milk to help with the blending. It gets its name for being a healthy version of the classic treat. You can flavour it however you like and eat as is, or you can turn it into bars like I have done here.

In the original recipe, she made chocolate chip nice cream, but I decided to make strawberry flavoured by adding some frozen strawberries into the processor. It became this beautiful pink colour. The coolest part about nice cream is how creamy it gets without the addition of any dairy! It’s a great dairy free/vegan treat.

That mixture gets spread on a simple oat crust (oats, banana, peanut butter) then popped in the freezer until firm. After that, you just have to cut it into squares (I made 16) and serve! It’s so good because there is no cooking involved!

My layer of nice cream was so much thicker than in the original recipe – maybe due to the addition of strawberries – but it was delicious so I was fine with it.

This is such a good (and healthy) snack to have on hand. I love the combination of peanut butter and banana. I also really liked the creaminess of the nice cream with the chewy texture of the crust.

Strawberry Nice Cream:

  • 3 frozen bananas, chopped
  • 1/2 cup frozen strawberries, chopped
  • 1/2 cup plain almond milk
  • 1 tsp vanilla
  1. Place frozen bananas and strawberries into food processor and pulse into small pieces. Add almond milk and vanilla, and continue to process until smooth. You may have to scrape the sides down a couple times to get everything well combined.
  2. Enjoy immediately, use in nice cream bar recipe or store in freezer for later.
