Quinoa & Cauliflower Salad

I was looking for some new salad/side ideas and came across this recipe from Budget Bytes (link here). It’s a delicious salad made with quinoa and roasted cauliflower, and seasoned with some warm spices. There were a few parts to this salad but they come together quite well. This was so yummy and I was happy that I could use up some of the things in my house. I did have to make a few small changes but it turned out amazing.

My favourite part of this salad is the roasted cauliflower and onion. Once baked, they get super sweet and caramelized which gives such nice flavour. I also really liked the sweetness of the dried cranberries. The salad is supposed to have sliced almonds but I used pumpkin seeds instead for the same extra crunch.

The beautiful yellow colour of the quinoa comes from cumin, turmeric and cinnamon. This was such a fragrant and perfectly seasoned dish. It was just very light and fresh with everything.

Last thing worth mentioning is that this salad tastes great warm (served immediately) and cold (leftovers). It is a great meatless side dish to accompany any meal but it could be a light lunch with a base of greens or added protein (ie: chickpeas, chicken breast, tofu).
