If you’re looking for an easy, one pan meal, you should make sheet pan dinners. If you’ve never made one, it is exactly how it sounds – a meal made on a sheet pan. Depending on the recipe, you may have to add the ingredients in different stages, but this kind of meal is perfect for any weeknight.
I have no idea why I don’t make more sheet pan meals because they are so darn easy. You just have to chop all the ingredients, coat them in oil and seasonings, then place in the oven to bake. There is no need to stand over a hot stove, just let the oven do all of the work. I mean, you do have to toss everything 2-3 times during baking but that’s a small detail. You also don’t need to make a side dish because you have all the protein and vegetables in the same pan!
The recipe I used today is from Well Plated by Erin (recipe link). It was a whole bunch of colourful vegetables (sweet potato, broccoli, bell pepper, zucchini, onion) and chicken breast, coated with olive oil, lemon juice and lots of italian spices. It turned out amazing!
Everything was cooked perfectly because of the two stage baking (sweet potato first, then everything else is added on) and most importantly, the flavour was incredible. All the vegetables were tender, including the sweet potato which even got a little caramelized. The chicken was so juicy and moist too, no dry poultry here! I will definitely make this again! 🙂
The only changes I made to the recipe were as follows:
- 1 yellow onion instead of 1 yellow squash
- Made an easy copycat italian seasoning (3/4 tsp each dried oregano, parsley and basil + 1/4 tsp chili flakes = 2 1/2 tbsp that recipe calls for)
- Omitted parmesan cheese which made this dairy free
