Berries & Cream

The past few weeks have been so hot and humid where I live. As much as I like to bake desserts, in times like these, I try to avoid adding any extra heat to the house. Thus, berries and cream. This is a super simple dessert with any fresh berries and homemade whipped cream.

Since it’s such a simple treat, making your own whipped cream is crucial. It’s also really easy to do. You can do it by hand but if you have a hand mixer or stand mixer, it’s quicker. So you start by beating the cream on it’s own, and once it starts to get thicker, you add the sugar and vanilla, then beat a little more. Once, you have stiff peaks, your cream is good to go. It’s best to serve soon after making because it tends to deflate after sitting in the fridge. Since it only takes a few minutes to prepare, it’s super easy to ‘whip’ up anytime 😛 .

In my bowl, I have some blueberries and local Ontario strawberries. Any other berries, or even peaches would be good options here instead. This was just a really fresh and easy dessert that was ready in only a few minutes.

Homemade whipped cream is so delicious. I could almost eat it by the spoonful. Once you start making your own, you’ll have a hard time reaching for a can of it at the store.

Homemade Whipped Cream

  • 1/2 cup whipping cream (DF/vegan: use coconut cream)
  • 1 tbsp sugar
  • 1 tsp vanilla
  1. Using hand/stand mixer at medium-high speed, beat whipping cream until it begins to get thick, ~1-2 minutes.
  2. Add sugar and vanilla and continue beating, another 1-2 minutes. Cream is ready when you see stiff peaks. Serve immediately
