I think salmon is my favourite fish. First of all, it’s just so good for you, with all the omega-3 fatty acids. It can also be prepared in a variety of ways and can take on almost any flavour.
Today, I’m sharing this yummy maple dijon salmon that I made for dinner. I got the recipe from a blog called Rachel Cooks (link here). You just make a super easy glaze, pour it on the salmon and bake until tender and flaky. I used salmon fillets so I cut the cooking time down.
This glaze was so good. I love the combination of maple syrup and dijon mustard, it’s a nice sweet and spicy mix. There’s also a salt and pepper, plus some paprika for a little colour. It was so simple and I’m sure you could use this glaze on chicken or even as a salad dressing. So versatile.
It turned out amazing. The maple and dijon in the glaze really soaked into the salmon, so every bite was packed with flavour. This was a great main dish for dinner, and I just served it with some couscous and roasted vegetables. My family gobbled it all up.
If you have any leftover salmon, you can use it in a wrap or sandwich (with lettuce, veggies, salmon), make soft tacos or have a mish-mash bowl.
