Going into the weekend, how about a little treat? These peanut butter cookies are quite simple and always turn out great. Plus, they’re only 3 ingredients – peanut butter, sugar, egg – so it couldn’t be easier. I use the recipe from Tasty (link here).
There are lots of other recipes online that are more like traditional cookies (with flour and baking powder, etc) but that just seems like so much extra effort. These peanut butter cookies are great because of their simplicity. I don’t know the science of the dough but I don’t want to question what works so well.
I love making the criss-cross design with a fork, I feel it makes the cookies look a little fancier. If you didn’t want that design, I guess you could just press the balls of dough down with a glass before baking.
Last thing about these cookies is that you need to let them cool before trying to move them. They come out of the oven quite soft, so I let them cool on the baking sheet for a few minutes then take them off to cool completely.
I just love these cookies. They have such a pure peanut butter flavour (because there are so few other ingredients) and they keep well in the freezer for snacking anytime.
