How does everyone feel about raw broccoli? I feel like most people (including me) aren’t big fans because it’s just so dry and boring on its own. However, when it’s mixed with yummy ingredients and a zippy dressing, it’s way more enjoyable. I mean, I was a little skeptical about the idea at first, my mom is the one who suggested this salad. But after making it and having a taste, I had a change of heart. Trust me, you’ll like it.
I used this recipe from Love & Lemons (link here). It was quite easy to follow and turned out exactly like the picture (minus the red onion because I didn’t have any). Since the broccoli is cut up into pretty small florets, it really soaks up all the yummy ingredients in the dressing. It’s a lot of bright flavours from the apple cider vinegar, dijon mustard, and garlic, which really make the broccoli pop.
What also helps to make this salad so scrumptious, is all the other mix-ins. There are dried cranberries which add some chew, sweetness and colour. But the stars here are the smoky almonds and pepitas. They get roasted with some soy sauce, maple syrup and smoked paprika, which makes them so tasty. You could make extra of these nuts and put them on any green salad. There is just so much good texture and flavour in this salad.
The recipe says this salad can be made a couple days in advance so it would be good for weekly meal prep. But it could definitely get gobbled up in one sitting too 😛 . I hope you give it a try!
