This is my 3rd muffin recipe in May, I’m really getting good use of my muffin tin haha. Here are the other muffin recipes I made this month – Corn Muffins, Bran Muffins. Is there anyone out there, like me, who would rather make muffins than make a big cake? Maybe it’s because they bake in less time which means I can eat one faster 😛 .
I saw these muffins on Instagram, but here is the actual recipe for them (link here). I love the combination of lemon and coconut, it’s so bright and summery. There is tons of lemon (zest and juice) and tons of shredded coconut, so the flavours are strong. The addition of oats and poppy seeds gives extra texture and nutrition too. These were not boring muffins.
They were also quite fluffy and moist inside. The only issue I had is that I guess I cooked them too close to the element in the oven so they got a little brown on top. Other than appearance, these were great muffins and I will make them again. It would be good to make a big batch and store them in the freezer for a snack anytime.
