Creamy Coleslaw

If you are looking for a break from traditional lettuce salads, coleslaw is a great alternative. I’ve made several coleslaw recipes on my blog, you can make it as simple or complex as you like. The recipe I made today was on the simpler side, funnily enough, from a website called Simply Recipes (link here).

This dressing, which is pretty common for coleslaw, is mayonnaise-based to give a nice creaminess. Aside from mayo, there is some vinegar and mustard which cuts a little of the richness, and green onion for some bite. I also like the use of cabbage and carrot that gives good colour and sweetness. I think I would use part red cabbage for next time, for extra colour.

This is just a great side for almost any meal but it could also be a light lunch with some protein. I don’t have any complaints about this coleslaw. Yum.
