Corny Corn Muffins

Is there a difference between cornbread and corn muffins? According to the internet, corn muffins are usually sweeter and cornbread more savoury. I’m not that much of a connoisseur on the matter, so they’re pretty much one in the same for me. I usually make cornbread/ muffins as a side for chili or soups, it’s the perfect accompaniment. They are also perfect on their own with a little butter.

I found a recipe from Chocolate Covered Katie (link here). It was a super easy recipe with only 9 ingredients and a 2 stage (dry/wet) mixing process. They’re quite low in fat and sugar, which makes them pretty healthy.

I like corn-based muffins because of the combination of flour and cornmeal, gives a good amount of texture, without being too dense. The fresh corn kernels also add nice crunch and touch of sweetness in every bite. If I wanted to make these even better, I would add some diced jalapeno pepper for some kick.

Cornbread can sometimes get a bad reputation for being dry and crumbly, but these muffins were super moist. They were also super fluffy from all the baking powder in the batter. I really enjoyed these muffins.
