Happy almost Cinco de Mayo! I love Mexican food so I could celebrate Cinco every day of the year. Whether it’s burritos, tacos, bean salad, fajitas or enchiladas, I will happily eat them all.
Here is a tasty and easy guacamole recipe that you can make to celebrate tomorrow. Not only does it have few ingredients, it has very few FRESH ingredients which is great if you haven’t been able to get to the grocery store in a while.
This guacamole only has avocado, tomato, lime and seasonings. You could add other items like red onion, cilantro or green onion to make it a little more colourful, but I like it more basic.
I was having a hard time finding fresh avocados at the store so I used frozen chunks for the first time. Once they are thawed, they mash up well and turn out just the same as if they were fresh. Another great thing is that they will never go rotten and you don’t have to worry about peeling or removing the pit. You can take a couple cubes out for avocado any time. I’d recommend trying them.
Back to the guacamole, I just served it with some pretzel crisps (I got the big bag from Costco a while ago) and some celery sticks. It was a nice snack/appetizer and it would go great with a nice margarita!
Ingredients:
- 1 cup avocado chunks (~1 large avocado)
- 1/4 cup tomato, diced
- 1 tbsp lime juice
- 1/4 tsp salt
- pinch chili flakes
- tortilla chips, pretzels, veggie sticks for serving
Directions:
- Mash avocado in medium bowl, leaving a few chunks if desired. Mix in tomato, lime juice and seasonings.
- Serve with chips, pretzels or veggies.
- Store any remaining guacamole in covered container for up to 2 days
