I did some baking for my grandma so she could have some nice homemade treats. I don’t think I have ever made (or eaten) a bran muffin, but this was her request so I was happy to make them. Bran muffins never sounded very appealing to me but after making them, they actually aren’t as bad as I thought they’d be. I used a recipe from Food.com (recipe link).
Bran muffins are pretty neutral in flavour, so the bit of extra sweetness from the dried fruit (I used cranberries instead of raisins) was a nice touch. I also like the cinnamon and other spices, adds some warmth to the muffin.
These are definitely a little healthy-tasting (because of all the bran) so they might not be everyone’s cup of tea. But I honestly wouldn’t be opposed to making these again. I would probably just add more dried fruit or maybe some chocolate chips. I know the extra sweetness would make them a little less healthy but they are still plenty good for you with all the fibre. These muffins will definitely help to keep you regular 😛 .
