Blueberry-Coconut Overnight Oats

I’ve been really loving overnight oats recently. It’s just so nice to prepare your breakfast the night before and then enjoy it right away in the morning. Normally I would take these oats to-go but since I don’t have anywhere to be now, I’m enjoying them on the couch at home 😛 . I will definitely be making these more once I am back to a regular work schedule.

Overnight oats are also so versatile, you can create any flavour combinations you like. My oats today were coconut based with almonds and blueberries. There was lots of texture and it wasn’t too sweet. It’s a great breakfast.

Since I used coconut milk, this recipe of oatmeal is great for people who are dairy free or vegan. You could use almond milk instead but you wouldn’t get the full coconut flavour. You could also use real cow’s milk if you consume dairy. Like I said, there are so many options when it comes to this type of dish.

Ingredients:

  • 1/2 cup coconut milk (not coconut cream)
  • 1/2 cup large oats
  • 1 tbsp sweetened coconut
  • 2 tbsp sliced almonds
  • 1/4 tsp cinnamon
  • 1/4 cup fresh or frozen blueberries

Directions:

  1. Combine all ingredients (except berries) in mason jar or container. Cover.
  2. Place in fridge overnight.
  3. In the morning, stir in berries. Enjoy!
